Wild ale er øl gæret med vildgær og bakterier, men bevidst podet frem for spontan gæring. Brettanomyces giver de tørre, læderagtige og gårdagtige noter, og sammen med mælkesyre- og eddikesyrebakterier udvikles syre og kompleksitet over måneder eller år, ofte på fad. I modsætning til lambic er kulturen valgt af bryggeren, og modsat kedelsyrnet sur øl fortsætter udviklingen i flasken.
